1. Spinach Lentil Soup
Ingredients
- Spinach 100 grams
- Soaked split moong (4 tbsp)
- 1 tomato
- Fresh corn
- Boiled peas
- Carrots
- Salt and black pepper
Instructions
- Cut the tomato in four long pieces
- In a pan, put the soaked moong dal
- Add 1/2 cup water
- Once boiled, reduce heat and cook on low flame
- Once properly boiled, add spinach
- Add the cut tomato
- Once cooked, switch off the heat and let the mixture cool down completely
- Remove the tomato peel, put the mixture in a blender and blend after adding some water for smooth texture
- In a pan, add 2 tbsp water
- Add the veggies in the pan
- Steam the veggies and avoid cooking them, the veggies should be crunchy
- Add corn, salt and black pepper
- Add the blended mixture
- Add some water for consistency and bring the mixture to a boil
- Add some grated paneer for garnish
- Add mint or oregano for flavour

2. Beetroot Soup
Ingredients
- 1 carrot
- 1 beetroot
- 1 tomato
- 1/2 cup fresh corn
- 1/2 cup boiled peas and mushrooms
- Salt and black pepper
- Mixed herbs
- 200 grams fresh paneer
Instructions
- In a pan, add 2 tbsp water
- Add 1 carrot, 1 beetroot and 1 tomato in the pan (red veggies are very high in anti oxidants and assist in blood making)
- Cover the pan and cook on low heat
- Once cooked, cool the mixture and remove the tomato peel
- Blend the mixture after adding some water
- In a pan, add 2 tbsp water
- Add 1/2 cup corn and 1/2 cup boiled peas and mushrooms
- Add the blended mixture and some water to improve consistency
- Add salt and black pepper to taste
- Add mix herbs to taste
- Add 200 grams fresh paneer (optional)
- Once the mixture starts to boil, switch off the flames
Your Beetroot Soup is now ready!
3. Sweet Potato Veggies Soup
Ingredients
- 1 sweet potato
- 1.5 tsp pure peanut butter (made of 100 % peanuts)
- 1/2 cup corn
- 1/2 cup beans
- 1/2 cup carrot
- 1 cup mushrooms
- 1 amla
- Some boiled peas
- Salt and black pepper
- Spices of your choice
Instructions
- Take a pan and cook the sweet potato in some water
- Reduce heat and let it cool completely
- Blend these cooked sweet potato and peanut butter in some water
- In a pan, add 2 tbsp water
- Add 1/2 cup corn, 1/2 cup beans, 1/2 cup carrot, 1 cup mushrooms and 1 amla in the pan
- Add some boiled peas
- Add salt and black pepper to taste
- Add other spices of your choice
- Add the blended mixture to this pan
- Add water to improve consistency
- Bring the mixture to a boil

4. Carrot and Lentil Soup
Ingredients
- 1 large carrot
- 3 tbsp soaked masoor dal
- 1 tomato
- Seasonal vegetables
- Soy chuncks
- Salt and black pepper
Instructions
- Add the masoor dal to a pan
- Add 1/2 cup water and start boiling
- Once the mixture starts to boil, reduce heat and cook
- Add the carrot and tomato
- Once cooked, let the mixture cool completely
- Peel the tomatoes
- Blend this mixture with some water
- Take the pan and add 2 tbsp water
- Add any 3-4 seasonal vegetables in the pan
- Add boiled soy chunks
- Add salt and black pepper to taste
- Add the blended mixture to the pan
- Bring this mixture to a boil

5. Detox Soup/ Salad
Ingredients
- 1 large or 2 small tomatoes
- Ginger and garlic
- Seasonal veggies (French beans, carrots and mushrooms)
- Cabbage, broccoli and capsicum
- Methi leaves or spinach
- Salt and black pepper
- Herbs and spices of choice
Instructions
- In a pan, add some water
- Add 1 large or two small tomatoes
- Add ginger and garlic to taste
- Cover and cook this on low heat
- Remove the peel from the tomatoes
- Blend this with some water
- In the pan, add some water
- Add the veggies (French beans, carrots and mushrooms)
- Cook these veggies on low heat
- Add cabbage, broccoli and capsicum
- Add methi leaves or spinach
- Add salt or black pepper to taste
- Add the blended mixture to this pan
- Bring the mixture to a boil and let it simmer for a few minutes
- Add herbs and spices of your choice
