Pre cooking daliya
Ingredients
- 1 tsp desi ghee
- 1 cup wheat daliya
- 2.5 cup water
Instructions
- In a pan, take 1 tsp desi ghee
- Add 1 cup wheat daliya
- Add 2.5 cup water
- Bring this mixture to a boil
- Cover the pan and cook on low heat for 15 mins
Daliya is now cooked. 1 cup raw daliya makes about 4 cups of cooked daliya. Let’s discuss the six recipes now
1. Carrot, nuts and seeds daliya
Ingredients
- 3 carrots
- 2 cardamom
- Some raisins
- 8 almonds
- 1 tsp chia seeds
- Some pumpkin and sunflower seeds
- 1/2 tsp tsp desi ghee
- 3/4 cup cooked daliya
- 3/4 cup cow milk
- Some jaggery
Instructions
- Wash, peel and grate 3 carrots
- Heat 1/2 tsp desi ghee, add 2 crushed cardamom to it
- Add all the nuts and seeds, slightly roast them
- Add grated carrots to the pan
- Add raisins
- Add 3/4 cup cooked daliya
- Add 3/4 cups of milk
- Cook for a few minutes
- Add some grated jaggery (optional)
- Or you can use pure honey instead
Enjoy it warm for breakfast or dinner

2. High protein daliya salad
Ingredients
- 1/2 tsp olive oil
- 1/2 tsp cumin seeds
- 1 chopped capsicum and carrot each
- 3-4 tbsp cooked kala chana
- 30-40 grams tofu
- Black pepper, herbs and salt to taste
- 1 cup cooked daliya
- 1 chopped cucumber
- 1 chopped tomato
- Some chilli flakes
- 1 tbsp lemon juice
Instructions
- In a pan, heat 1/2 tsp olive oil
- Add 1/2 tsp cumin seeds
- Add chopped capsicum and carrot
- Slightly cook them
- Add 3-4 tbsp cooked kala chana
- Add 30-40 grams tofu
- Add black pepper, herbs and salt to taste
- Add 1 cup cooked daliya
- Cover and cook for 1-2 minutes
- In a large bowl, add 1 chopped cucumber and 1 chopped tomato
- Add some chilli flakes and 1 tbsp lemon juice
- Add cooked daliya chana mixture to bowl

3. Daliya kebabs / cutlets
Ingredients
- 1 cup cooked daliya
- 1 chopped onion
- 1 boiled potato
- 1 cup soya granules
- 3/4 tsp coriander powder
- 1/4 tsp garam masala
- Chilli powder to taste
- 1 tsp cumin powder
- 1/2 tsp amchur powder
- Salt to taste
Instructions
- Take a bowl
- Mix all the ingredients well
- Make medium sized cutlets from the mixture
- On a hot tava, add 1 tsp oil and place the cutlets
- Cook from both the sides on low to medium heat until they turn brown
Enjoy as snack anytime. This recipe serves 3-4 person
4. Daliya omelette
Ingredients
- 4-5 tbsp cooked daliya
- 2 eggs
- 1 tsp olive oil
- Cumin seeds
- 1 chopped onion and garlic
- Salt to taste, chilli flakes and mixed spice
Instructions
- In a bowl, add 4-5 tbsp cooked daliya
- Break 2 eggs in the bowl
- Beat and mix egg and daliya together
- Heat 1 tsp olive oil in a pan and add cumin seeds
- Add 1 chopped garlic and onion
- Add salt to taste, chilli flakes and mixed spice
- Add eggs and daliya mixture with chopped tomatoes
- Mix well and start gathering everything in the centre
- Cover and cook for few minutes on low heat
- Carefully flip the omelette and cook from the other side
Serve warm for breakfast. This recipe serves one person
5. Daliya paneer bhurji / umpa
Ingredients
- 1 tsp olive oil
- 1 tsp cumin seeds
- Chopped onion
- Chopped carrots and capsicum
- Salt, chilli powder to taste
- Turmeric powder
- 1 chopped tomato
- 1 cup cooked daliya
- 40 grams paneer
Instructions
- In a pan, heat 1 tsp olive oil, add 1 tsp cumin seeds and onion
- Add chopped carrots and capsicum
- Add salt, chilli powder and turmeric powder to taste
- Add 1 chopped tomato
- Add 1 cup cooked daliya
- Cover and cook for a few minutes
- Add 40 grams grated paneer
This recipe serves one to two persons
6. Daliya khichdi
Ingredients
- 1 cup wheat daliya
- 3 tbsp arhar dal
- 3 tbsp split moong dal
- 3 tbsp masoor dal
- 3 tbsp urad dal
- 3 tbsp rice
- 1 tsp desi ghee
- 1 tsp cumin seeds
- 2-3m glasses of water
- Salt, spice mix, chilli powder and turmeric powder to taste
Instructions
- Heat 1 tsp desi ghee and add 1 tsp cumin seeds
- Add daliya and roast it on low flames
- Wash all the other ingredients in a bowl
- Add all the other ingredients in the pressure cooker
- Add 2-3 glasses of water (depending on the consistency you like)
- Add salt, spice mix, chilli powder and turmeric powder to taste
- Bring the mixture to a boil and put on the lid
- Cook for 3 whistles
Serve warm for lunch. Have it with curd, gravy or as it is!!
