You’ll love this High protein Low carb dinner meal, it’s creamy, filling and highly nutritious. It’s protein packed thanks to soy paneer and Rich in Fibre to boost your gut health. I’ve loved stew ever since I was in my teens. It’s a simple way to combine the goodness of multiple foods into one dish. For stew base I have used pumpkin, carrot and spinach. But you can use any vegetables available in your region or house. I have skipped tomatoes this time but feel free to add one or two if you like the tangy taste and colour it gives to the stew.
Ingredients:
- Pumpkin- 1 cup
- Carrot- 1 pc
- Spinach- 3/4th cup
- Lemon grass (optional)
- Soy paneer/tofu – 100gm
- Steamed Mixed veggies-1 bowl (carrot, bell peppers, corn, broccoli etc.,)
- salt and seasoning: as per taste
Directions:
- Lightly cook Pumpkin Carrot Spinach Lemon grass
- Remove the lemon grass blend the all the veggies
- Roast the tofu in a pan
- Add blended Mixture into a pan and add salt and seasoning as per taste mix well and cook
- Then add the mixed veggies and roasted tofu and combine well sauté for a while.
- And your delicious High Protein Low carb Vegan Dinner Stew is ready to enjoy
- Serve hot.
