Hello Everyone, serving today is an easy to make appetising and Nutritious salad. Ready in just few minutes, this Creamy Fiber & protein rich Chana vegetarian salad served with beets and yogurt dip will become the perfect meal to Enjoy on any sunny day.
Ingredients:
- Beet root 1 (Steamed or roasted)
- Yogurt/ Hung Curd 3-4 Tbsp
- Peanut Butter 1.5 Tbsp
- Salt to taste
- Seasoning (dried herbs, garlic powder, chilli powder, coriander powder, black pepper powder, roasted cumin powder, oregano, Amchur powder)
- Steamed mixed Vegetables 1.5-2 Cups
- Boiled Black Chana 1 Cup
- Roasted Boondi 1 Tbsp
- Tamarind/ imli ki Chutney 2 tsp (optional)
Directions:
- Grind beets to make a paste
- In a bowl combine beet root paste, yogurt, peanut butter, salt & seasoning to make a creamy vibrant dressing
- You can store the dressing in fridge for up to 3 days
- In another bowl combine veggies, boiled chana, little salt, boondi & imli chutney & mix well
- For serving add 2-3 Tbsp dressing at the centre & slight spread it with a spoon
- Place the veggies, chana mix on top
- Enjoy for lunch or as side.
