Traditional paneer based sweet. It’s a Biharis famous treat known as paneer khurma or belgrami. Crispy from outside and slightly chewy from inside. Very different and delicious dessert. Made with just three simple ingredients.
Ingredients:
- Paneer: 300gm
- Water: 2 cups
- Desi khand: ¾ Cup
Optional flavouring:
- Cardamom and saffron
- Baking soda: ¼ cup
Directions:
- Start with preparing Khand syrup
- Add ¾ cup of sugar and 2 cups of wate to a pan
- Place the pan on heat
- Mean while crush 2-3 green cardamom
- Add crushed cardamom and few strands of saffron in the khand water
- Take 300gms of paneer and cut into cubes
- Once khand is dissolved in water and it comes to a boil, add paneer cubes to the syrup
- Drop paneer cubes slowly one at a time
- Now you can add baking soda(optional) to the pan (it removes the dirt (in the form of white bubbles) from the sugar or Khand, you can remove it by spoon)
- Cover the pan, lower the heat to lowest
- Let it cook this for about 40-50 min
- You can check in between and stir it lightly
- After about 35 mins sprinkle some water on top of the pan
- This will help reducing the overheating process, also this will help create more bubble in pan
- More bubble means better golden colour on paneer
- After about 50 mins you will see nice golden brown colour paneer cubes
- Remove the lid now we need to thicken the syrup
- Simmer the syrup with paneer cubes over low heat without covering
- Turn the paneer cubes upside down to prevent burning
- After 7-8 mins you will see the syrup has thickened
- Allow the syrup to cool before taking the cubes out
- After 5 mins transfer the paneer cubes to a sieve with a bowl underneath.
- Leave the cubes in the sieve for an hour or two
- Now the Paneer khurma is ready to be served
- Store the khurma in a container, they stay good at room temperature for 4-5 days
- But you can also refrigerate, and enjoy them for 15 days
