Quinoa palak paneer bowl

Quinoa Palak Paneer Bowl

Ingredients (1 serving):

  • Quinoa – 1/4 cup
  • Mixed vegetables 60g
  • Paneer – 70g
  • Palak (spinach) 100g
  • Tomato – 1
  • Mustard oil – 1/2 tsp
  • Garlic some
  • Salt – as per taste
  • Seasonings – a pinch of black pepper, chili powder

Instructions

 Step 1: Cook Quinoa with Vegetables

Wash 1/4 cup of quinoa thoroughly to remove bitterness.
Soak it for minimum 45min to one hour 
2. Boil quinoa with 1 Cup water
3. When quinoa is half-cooked, add chopped mixed vegetables (carrots, peas, beans).
4. Cook until the water is absorbed and the quinoa is soft and fluffy. Set aside.

Step 2: Make Quick Palak Paneer
1. Heat mustard oil in a pan
2. Add chopped garlic and sauté for 30 seconds until fragrant.
3. Add paneer cubes and roast for 2-3 minutes until golden brown on the edges.
4. roughly chop tomato and spinach, add to blender to make a puree
5. Add the tomato spinach puree, salt, and seasonings (black pepper, chili powder)
6. Mix well and cook for 2-3 minutes until everything is combined.

Step 3: Assemble the Bowl
1. Place the cooked quinoa and vegetables in a serving bowl.
2. Top it with the quick palak paneer mixture.
3. Serve warm and enjoy!
