Crispy Poha Moong Omelette

Ingredients

Soaked moong dal1/4 cup
Poha1/2 cup
Curd1/4 cup
Green mix veg (Capsicum)3/4 cup
Yellow mix veg (Corns, Carrot)3/4 cup
Boiled potato1
SaltTo taste.
Black pepper To taste.
Red pepper To taste.
Chaat masala To taste.
Ghee/ oil1 tsp.

Directions

  • In a bowl, add soaked moong dal, oats, curd, and spices.
  • Add a splash of water, and blend well.
  • To it add boiled potato, and blend again.
  • Now transfer the batter into a bowl.
  • And add corns, carrot, and capsicum to it.
  • Mix everything well.
  • In a separate small bowl, add 1 tbsp. baking powder with little water.
  • Mix and immediately add it to the batter and mix well.
  • Don’t keep the batter for long, and immediately start the process of cooking.
  • In a pan, add some oil, and the batter.
  • Spread it nicely, and spread some oil on top of it.
  • Cover it with a lid and let it cook nicely.
  • Once cooked from one side, flip it over and let it cook.
  • And your crispy vegan omelette is ready!
