Healthy Amaranth Energy Bars for Snack or Breakfast. No Cooking required, ready to eat Recipe. Amaranth also known as राजगिरा, अमरांथ या चौलाई in Hindi. Amaranth is actually a seeds and a pseudo grain. It’s a nutritious grain rich in protein, fiber, micronutrients and antioxidants. Amaranth is Indian counterpart of Quinoa. Rajgira is a Very popular grain mostly consumed during Navratri.
Ingredients:
- 2 Cups of Puffed Amaranth
- 1/4 Cup cold pressed coconut oil or Melted Desi Cow Ghee
- 1/3-1/4 Cup Wild Honey / Jaggery Syrup ( if adding ghee)
- 4 tsp Peanut butter 100%
- 2.5 Tbsp unsweetened Cocoa Powder
Optional ingredients:
- Mixed nuts & seeds
- Shredded or desiccated Coconut
- Dry fruits or raisins
Direction :
- Combine all ingredients into a large bowl
- First add Coconut oil, honey, peanut butter & Cocoa powder
- Use any other nut butter
- Combine well, looks like chocolate dip
- Add 2 cups of puffed Amaranth & desiccated coconut
- Mix well until nicely combined
- Sprinkle some roasted seeds on top & press
- Set in Silicon energy bar moulds or tray or Thali
- Keep in fridge for few hours
- De-mould or cut into desired shapes and sizes
- You can also make small bite size Ladoo from it
- Store in fridge for upto 2 weeks
