Healthy Apple Ragi Oats Mini Pancakes

Ingredients

  • 2 Medium apple (sliced into thin circles, cored)
  • 2 Tbsp ragi (finger millet) flour
  • 2 Tbsp oats (powdered)
  • 1 Banana
  • Some Milk (dairy or plant-based milk)
  • 2-3 Dates (for sweetness)
  • 1/2 tsp cinnamon powder (Optional)
  • 1/4 tsp Pure Vanilla Extract
  • Coconut oil or ghee (for cooking)
  • Optional : A Scoop of Protein Powder or an Egg

Directions
1. Prepare Batter:
– In a blender mix ragi flour, oats flour, banana, Vanilla extract, dates cinnamon, and milk.
– blend until the batter is smooth and slightly thick.

2. Prepare Apple Slices:
– Wash and slice apples into thin circles, Remove Core

3. Dip and Cook:
– Heat a cast iron tawa or pan and grease with coconut oil/ghee.
– Dip each apple slice into the batter, coating evenly.
– Place on the pan and cook on medium heat
Cover & cook for 2-3 minutes per side until brown.

4. Serve
– Stack the mini pancakes, drizzle with honey or maple syrup, and sprinkle nuts or seeds for crunch.
