Healthy jar salad recipe

High protein, Hassle free and super delicious, Easy to carry to work, college or anywhere.

Ingredients:

Tofu/low fat paneer:100gm

Poha:1/4th cup

Mixed veggies: 1 cup

Sesame seeds:1 tsp

Lemon:1

Curd: 3Tbsp

Olive oil: 1 Tbsp

Garlic powder: as per taste

Salt and salad seasoning: as per taste

Some roasted seeds (optional)

Direction:

Roast tofu in little olive oil, once tofu is almost roasted add sesame seeds to pan and roast for another minute.

Remove both tofu and sesame seeds from pan and add chopped veggies to pan with little water cover and let it cook for few minutes. (Don’t overcook, they should have the crunch)

Take a glass jar with lid or wide bottle

Squeeze the juice of one lemon in a jar

Add Olive oil and curd to the jar and mix all well to make your salad dressing

Add salt to taste, salad seasoning and garlic powder and mix well

Add roasted tofu and sesame seeds into the jar

Add washed poha and top it up with semi cooked veggies

Add roasted pumpkin and sunflower seeds on top

Close the lid and carry anywhere you like.

Note: store in a cool place, if not eating it in next few hours store in fridge.

Before eating serve it on a plate or in a bowl, by turning jar upside down, tofu and poha will soak up all the dressing and moisture, turning up super soft and juicy
