High protein, low carb vegan dinner stew

You’ll love this High protein Low carb dinner meal, it’s creamy, filling and highly nutritious. It’s protein packed thanks to soy paneer and Rich in Fibre to boost your gut health. I’ve loved stew ever since I was in my teens. It’s a simple way to combine the goodness of multiple foods into one dish. For stew base I have used pumpkin, carrot and spinach. But you can use any vegetables available in your region or house. I have skipped tomatoes this time but feel free to add one or two if you like the tangy taste and colour it gives to the stew.

Ingredients:

  • Pumpkin -1 cup
  • Carrot- 1 pc
  • Spinach- ¾ cup
  • Lemon grass (optional)
  • Tofu- 100gm
  • Steamed mix veggies- 1 bowl (carrot, tomato, corn, bell peppers, broccoli etc,)
  • Salt and seasoning (as per the taste)
  • Coconut milk (optional)

Method:

  • In a pan add pumpkin carrot spinach with lemon grass (optional) cook slightly.
  • After it cools down remove the lemon grass and blend all the ingredients and make a paste.
  • Slightly roast tofu in a pan with ghee or some oil.
  • Steam some mixed veggies.
  • Now add the blended paste into a pan and the seasonings and salt as per the taste and choice and mix well.
  • Now add roasted tofu and steamed veggies.
  • You can add water to adjust the consistency.
  • You can also add coconut milk to make it more creamier.
  • And with that our delicious high protein low carb dinner is ready.

You can prepare this easy and quick dinner in no time with little meal prep.
